Multi-Grain Pancakes

Trying to get more whole-grains in my family’s diet can really be a chore. These pancakes have made it so much easier!

I use my coffee grinder to grind flax seeds and rolled oats and combine them with whole wheat flour.

It is a pretty easy recipe to throw together but I usually make a large batch on the weekend and freeze for use during the week. Just make sure to freeze them in one layer on a plate or cookie sheet before storing in a container so they don’t stick together. Heat them in the microwave or toaster oven and enjoy a quick and easy breakfast!


Multi-Grain Pancakes

Easy way to increase your whole grains! Enjoy hot off the griddle or freeze for a quick weekday breakfast.

Ingredients

  • 1/4 cup flax seeds
  • 1/2 cup rolled oats
  • 3/4 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1 1/2 cups milk
  • 3 1/2 tablespoons melted oil or butter
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 2 eggs

Directions

  1. Grind flax seeds and rolled oats in coffee or spice grinder
  2. Heat griddle or pan on medium-medium high heat depending on your stove
  3. Combine ground flax, ground oats, whole wheat flour, baking powder, and salt in a bowl
  4. Combine milk, melted oil or butter, sugar, and eggs
  5. Combine dry and wet ingredients
  6. Pour or spoon onto preheated griddle or pan in batches; flip when bubbles come through to top; adjust heat as needed
  7. Optional: freeze leftover pancakes in a single layer and then store for later use; heat in the microwave or toaster oven
