Trying to get more whole-grains in my family’s diet can really be a chore. These pancakes have made it so much easier!
I use my coffee grinder to grind flax seeds and rolled oats and combine them with whole wheat flour.
It is a pretty easy recipe to throw together but I usually make a large batch on the weekend and freeze for use during the week. Just make sure to freeze them in one layer on a plate or cookie sheet before storing in a container so they don’t stick together. Heat them in the microwave or toaster oven and enjoy a quick and easy breakfast!

Multi-Grain Pancakes

Easy way to increase your whole grains! Enjoy hot off the griddle or freeze for a quick weekday breakfast.
Ingredients
- 1/4 cup flax seeds
- 1/2 cup rolled oats
- 3/4 cup whole wheat flour
- 2 teaspoons baking powder
- 1 1/2 cups milk
- 3 1/2 tablespoons melted oil or butter
- 2 tablespoons sugar
- 1 teaspoon salt
- 2 eggs
Directions
- Grind flax seeds and rolled oats in coffee or spice grinder
- Heat griddle or pan on medium-medium high heat depending on your stove
- Combine ground flax, ground oats, whole wheat flour, baking powder, and salt in a bowl
- Combine milk, melted oil or butter, sugar, and eggs
- Combine dry and wet ingredients
- Pour or spoon onto preheated griddle or pan in batches; flip when bubbles come through to top; adjust heat as needed
- Optional: freeze leftover pancakes in a single layer and then store for later use; heat in the microwave or toaster oven
