Easy Tomato Basil Soup

Looking for an easy dinner? This is it! Soups are amazing because they can be so simple to make, inexpensive, and still satisfying. They are an easy way to fill out a meal without using many ingredients. We had this soup with sandwiches on country white oatmeal bread, oven baked potato wedges, and a fresh arugula salad. It really was delicious and filling. And all of it put together in a matter of minutes.

Mincing the garlic is the most difficult part of the prep for this recipe. It really is so easy to make. I heated some olive oil on medium low heat, sweated my garlic. Then I added crushed tomatoes, fresh basil, salt and pepper, a pinch of sugar, and some water to thin it out. I love to add just a little sugar with most tomato based recipes, especially salty ones like soup and sauce, because it really rounds out the flavor. Simmer for 5-10 minutes and it is ready to eat!

As always, taste and adjust your seasonings before serving.

Easy Tomato Basil Soup

Ingredients

  • 1 teaspoon olive oil
  • 3 cloves garlic, minced
  • 28 oz. can crushed tomatoes
  • 3 cups water or stock
  • 2-3 tablespoons fresh basil, torn or chopped
  • 1 1/2-2 teaspoons salt, to taste
  • pinch black pepper
  • pinch sugar

Directions

  1. Heat oil in a pot over medium low heat
  2. Cook garlic for 1-2 minutes
  3. Add remaining ingredients; simmer for 5-10 minutes
