Toasted Veggie Wrap

This is just a simple and easily customized wrap recipe. I served this for dinner with mushroom onion soup and oven roasted potato wedges. It was so satisfying! We have been reducing the animal products in our diet for several reasons and this vegetarian meal was truly enjoyable.

You can use whatever fillings you would like or add mayo or mustard as well. I used tomato, avocado, onion, bell pepper, spinach, and mozzerella cheese. Sprinkle with a little salt and pepper before rolling, if you wish.

Simply fill and roll! I like to fold the ends in and then roll them straight across.

Heat your pan with a little oil or butter over medium – medium low heat. Place your wraps in the pan and brown on both sides.

Quick and easy! Enjoy with your favorite sides.

Ingredients

  • 1/2 cup fresh spinach, torn into pieces
  • 1/4 bell pepper, sliced
  • 1/4 red onion, sliced
  • 1 tomato, sliced
  • 1 avocado, sliced
  • 1 – 1 1/2 cups shredded regular or vegan mozzerella cheese
  • 4 eight inch flour tortillas
  • optional: sprinkle of salt and pepper, mayo, mustard, dressing, additional vegetables etc.

Directions

    1.Place fillings in a line in center of wrap; fold two opposite ends in; roll from unfolded ends straight across
  1. Repeat with remaining wraps
  2. Heat pan with oil or butter iver medium to medium low heat
  3. Brown wraps on both sides
