Corn and Black Bean Salsa

I had some leftover oven roasted corn that I wanted to use up and decided to make this salsa as a topping for kidney bean tostadas. I was aiming for something sweet and slightly tangy and this worked out perfectly.

As usual, I started off with dried beans. You could easily use a can of beans instead but I usually have dried on hand. If you are using dried too, soak them overnight or, if you forget (like I did), cover them with water in a pot and boil for 10 minutes. Remove from heat, cover, and allow to sit for 1 hour.

Drain your beans and then cover with fresh water in the same pot. Add 1 teaspoon of salt and 1 bay leaf. Simmer for 1 hour until tender. Drain and rinse with cold water. Meanwhile, cut up your other vegetables. I chose to use red onion, bell pepper, and tomato in addition to the corn.

Now prepare your seasonings. Combine vinegar, sugar, salt, cumin, black pepper, paprika, garlic powder, and hot sauce to taste. Add your drained beans and vegetables and toss to combine.

I love the contrast of sweet and savory. Serve as a topping or as a snack with chips. Enjoy!

Sweet, fresh, and tangy!


Ingredients

  • 1/2 cup dried black beans or 1 15 oz. can of black beans
  • 1 bay leaf
  • 1 teaspoon salt + 1/2 teaspoon salt
  • 1/4 bell pepper, diced
  • 1/4 red onion, diced
  • 1 1/2 cups corn kernels, cooked
  • 1 tomato, diced
  • 1/4 cup white vinegar
  • 1 tablespoon sugar
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cumin
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • hot sauce, to taste

Directions

  1. For dried beans: Soak beans overnight or boil covered with water for 10 minutes; remove from heat and let soak covered for 1 hour; drain
  2. Cover beans with fresh water, 1 teaspoon salt, and 1 bay leaf
  3. Simmer, covered, for 1 hour until beans are tender; check regularly so that beans do not dry out
  4. Drain and rinse with cold water
  5. For dried and canned beans: Combine vinegar, sugar, black pepper, cumin, paprika, garlic powder, hot sauce, and 1/2 teaspoon of salt in a bowl
  6. Add beans, corn, onion, bell pepper, and tomato
  7. Toss to coat; taste and adjust seasonings as needed
  8. Note: salt and sugar take time to dissolve. Wait about 5 minutes before tasting when adding salt and sugar
