Roasted Tomatoes

This is one of the first foods I ever actually cooked back in the day that didn’t come from a packet. I used to eat it with onions, couscous, and one of those frozen breaded chicken patties. I would more or less alternate between that and spaghetti since that was pretty much all I knew how to cook at the time. How much we change…

I like the texture of cooked tomatoes with fried foods, like this fried shrimp, and things like rice that are bland and carry the flavor well. It is very easy to make!

Half your tomatoes, season with salt and pepper, and let them sit while the oven preheats to 500 degrees.

Optional last minute decision: sprinkle with parmesan cheese before baking, if you wish. You could also add garlic or mozzerella.

Put them in the oven for 15-20 minutes and enjoy!


Roasted Tomatoes

Ingredients

  • 2 medium to large sized tomatoes, halved
  • 1/4-1/2 teaspoon salt
  • 1/4-1/2 teaspoon black pepper
  • Optional: 1 teaspoon parmesan cheese
  • Additional options not shown: minced garlic, garlic powder, mozzerella cheese

Directions

  1. Preheat oven to 500 degrees
  2. Place tomatoes cut side up in baking dish
  3. Sprinkle tops with seasonings
  4. Roast for 15-20 minutes
